It had just occurred to me when I editing post #4707941's notes, but I, as of now, haven't seen anything in the uploading guidelines state that if you have the old version of an image that is uncensored while the current/newer version is censored and both of them are from the same source (like pixiv), you could or couldn't ask to replace that censored version with the old uncensored one
Since technically, the old version is no longer available so I don't know whether it's allowed to be a replacement or not (also in case if it was a saved photo), did any of this happened before?

Generally, censored versions are considered inferior and should not be posted over the uncensored version, though other factors (such as differences in image quality) can come into play.

If the censored version is of higher quality than the uncensored version, then you may upload both versions together and mark them as parent & child.
If you were to uncensor an artwork that you did not create (i.e., third-party_edit), you may NOT flag the official censored version as being inferior nor credit yourself as being the artist. You are expected to also mark them as parent & child and are allowed to credit yourself in the description as the editor.

I meant like if it's allowed since that old version was replaced in the original source with the new one, pixiv allows the author to replace the artworks in their posts, so technically the post that is displayed on the source when you find the same image will be the new censored one and not the old uncensored one

As long as it was publicly available and isn't now pay-only, I don't think it should be an issue to post it. There's plenty of art here whose source has been deleted, and part of being an art archive is having art archived for when the original is lost/unavailable. It doesn't seem to be against the Uploading Guidelines that I can tell, but a moderator or admin may need to weigh in on it.

Is the censored_version_at_source tag a good way to indicate that at least one of the sources added is censored?

Yes, but only if the post isn't already censored
